Tips for iPhone
The MP3 goes into the Files app, in Downloads (On My iPhone, or iCloud Drive if that's where Safari saves). From there you can share it, AirDrop it, or open it in another app.
An iPhone saves video as MOV: usually HEVC with AAC sound, or H.264 when Camera is set to Most Compatible in Settings. Only the sound is read, so the picture's format doesn't matter. Cameras that record MOV with uncompressed (PCM) sound convert too; if you're going to edit it, download WAV instead of MP3.
With Optimize iPhone Storage on, a video may still be in iCloud when you pick it. Let it finish downloading to the phone before you pick it here.
Screen recordings keep the sound of the app you recorded, and your voice only if Microphone was turned on before you started (press and hold the record button in Control Center). Some apps, like streaming services, keep their sound out of recordings. On a Mac, a screen recording only has sound if a microphone was picked in the recording options before you started. MP4 and MOV open on iPhone; MKV files don't open in any iPhone browser.

Yes. Every browser on iPhone runs on the same engine as Safari, so it works the same way in Chrome, Firefox or Edge. Keep iOS up to date: older versions can't encode the audio.
Can I take the music out and keep the voice?
Yes. After extracting, tap Split audio to separate the voice from the music on the phone itself, up to 10 minutes at a time (2 where Safari can't use the graphics chip). The first split downloads the audio engine (about 90MB, once), so use Wi-Fi for it.
Can I remove the voice and keep the music?
